Michael Brocklebank

Michael Brocklebank is best known in Sheffield as owner and part-time singer at the Ivory piano bar in Regent Terrace.

From Handsworth, he also runs his own company dealing in furnace refractories.

Are you a cook?

Yes but more of a traditional cook than modern cuisine. I do a great Sunday lunch.

Any cooking tips?

Always use eight eggs for Yorkshire puddings – and, I know everyone says it, but don't open the oven at all for 30 minutes.

What's your favourite dish?

Medium rare chateaubriand steak

And a drink to go with it?

Cold Italian lager

Your favourite restaurant in the Sheffield area?

I really can't say The Ivory, can I? I do like Marco@Milano – I think they have a really good thing going and I've never had a bad meal there.

And pub?

I'm not sure – more and more pubs are changing to chains and it gets harder to find home-cooked food. I like Thyme Cafe, but that's not really a pub, is it?

What's the worst meal you've ever had?

Fish and chips – how can so many places get it so wrong when that's all they sell?

And the best?

Slow-cooked seven-hour lamb, that's a dish made with passion.

Your favourite TV cook?

Gordon Ramsay. He's passionate about what he does and he really knows how to entertain.

What do you think of Sheffield as a place to eat out?

I think there are a lot of good places, although we need to get over the current problems – or should I say people need to be given the confidence to start going out again and support the local bars and restaurants. But Sheffield is OK – and I can only see it getting better.
