John Cluckie is head chef at Marco’s New York Italian. Born in Ireland, he moved to Sheffield ten years ago and now lives in Woodseats with wife Zoe and Mazzie the cat.
Are you a cook?
I’ve been a chef for almost 17 years and head chef at three Sheffield restaurants.
Any cooking tips?
Never be afraid to try something different as this is how some of the most famous dishes were invented.
What’s your favourite dish?
I’d have to say roast rump of lamb with rosemary and beans.
And a drink to go with it?
A nice bottle of Pinot Noir del Veneto, Munro 2010/11.
Your favourite restaurant in the Sheffield area?
There’s a great choice, but my favourite is Wasabi Sabi in London Road.
The Prince of Wales in Banner Cross – friendly atmosphere and great beer!
What’s the worst meal you’ve ever had?
Poached salmon in gin, with a dill dressing, spinach and sautéed potatoes.
And the best?
Probably a 48-hour roasted beef with watercress and béarnaise sauce.
Your favourite TV cook?
Anthony Bourdain or Tom Kerridge. Original with their recipes and dare to experiment with cooking.
What do you think of Sheffield as a place to eat out?
It’s come a long way in the past five years with more quality restaurants opening all the time. Marco Pierre White is one of Britain’s top chefs so it’s exciting for the city to welcome a celebrity endorsed restaurant – I hope others will follow suit.
