Sheffield’s Young Chef of the Year put the new Moor Market to the test when he gave his first ever demonstration as part of Monday’s launch celebrations.

Sheffield’s Young Chef of the Year put the new Moor Market to the test when he gave his first ever demonstration as part of Monday’s launch celebrations.

Drew Snaith, 20, worked for top names including Raymond Blanc, Gordon Ramsay and Sat Baines before taking up his current post as sous chef at Fancie, Ecclesall Road.

But this week he encountered a new challenge, when he was the first to use the market’s new, high-tech demonstration area.

First he took his pick of the new market stalls to source ingredients including fruit, vegetables, nuts, cheese, duck and specialilty tea.

Then, with commentary from Eat Sheffield champion Niki Baker, he cooked his signature dish of roasted green cauliflower with a Skegness blue cheese, pickled apple, roasted hazelnuts and radish salad, followed by pan-fried mallard with a satsuma dressing, Earl Grey sauce and marinated golden beetroot.

“I was really nervous, but this little unit is brilliant… It’s a joy to work on,” he said.

Niki Baker added: “Drew did a marvellous job.

“It was a worthy launch for the new market and it’s good to know it stocks such a wide range of ingredients.”
