Award-winning chef Russ Housley is hoping his latest career move will prove a roaring success…
The Sheffield-based patisserie specialist – twice runner-up to the prestigious Junior Master Chef of the Year title – has joined Barrett’s brasserie in Hutcliffe Wood Road, Millhouses as number two to chef patron James Barrett.
“It’s a completely different challenge for me and we work really well together,” says Russ, formerly of Coghlan’s Cookery School.
“I get to implement a lot of my own ideas and James is really supportive.”
Russ officially takes up his new post on September 1, when Barrett’s will launch a new outside catering and private dining service.
“This will give us the extra capacity to cope with weddings and parties,” says James, who opened the brasserie only three months ago.
“It’s very exciting and I’m looking forward to taking it up a notch.”
The outside catering service will range from simple canapé parties and cold dressed buffets to elaborate celebration cakes and chocolate creations made by Russ, whose Junior Master Chef prize included a specialist chocolate course.
A lion he made is now on display in Barrett’s foyer.
Meanwhile the brasserie is branching out on Tuesday, August 23, when it hosts a Caribbean night. Authentic food will be on offer thanks to the influence of another new team member, apprentice Chevonesse Smith, who was born in Jamaica.
